Is it possible to hack an instagram account without phishing,payload,rat or troyan? I mean entering in the account of the personal instagram without that person has to click, download or fill anything?

Saw some exploit on 0day.today that has to be working (i am not related to it). Can share link if you want but i am not responsible for workability
0day.today is scam.
Try brute force first search in leaked bases maybe that insta use the same passwords . or find a vulnerability in instagram if you are genius enough.
otherwise is waste of time.
A vulnerability allowing brute force instagram was fixed about 3 years ago. It is very unlikely that you can easily brute force it. Instagram will see abnormal amount of requests trying to authorize and will just notify owner of account about hacking attempt .
some say magic doesn't exist, that it's all smoke and mirrors 
then you have to guess their password, start researching what brute force is and good luck

With a hijacking could I control all the dispositive without the other person has to do anything?
if you manage to get the sessions cookies you can see the person's account, but not control their device

most likely no, passwords shouldn't be sent on cookies
You will not HACK Instagram account ....you will try to hack the End user....person who use the account...
And the operation success depends on how much educated is the victim...and method used...
Also depending what device your target use....
