I'm no expert, but it seems more logical to me to use linux if you want to disable all telemetry. Every windows update can turn all telemetry back on, even if you disabled it. You could, of course, disable telemetry and updates on windows, but that's not safe.

Yes for sure, if you want privacy, use linux, but if you are forced to use wind/MacOS and it makes you feel uncomfortable, you can use that to feel little bit better

Yes. Maybe the OP solution is okay when you need regular use. If you need high privacy, a VM with live image (non-persistent) is much better, such as Tails (https://tails.boum.org/). Even better if you can have live USB and laptop.
